Home-made Indian style Macaroni

While I have had this at different places, whenever I think of Macaroni, my mind wanders off to mom’s recipe. So, this one is straight from my mom’s kitchen, prepared using desi ingredients in desi style along with loads of veggies.

  • Macaroni of your choice (elbow/ straight) – 100g
  • Finely chopped onion – ½, Tomato – 1, Capsicum – ½, Peas – 8-10, grated Carrot – ½,
  • Ginger-garlic paste – ½ teaspoon
  • Cooking oil – 3-4 teaspoon
  • Sugar (optional) – 1/3 teaspoon
  • Dried and crushed Fenugreek leaves
  • Tomato ketchup – 1 teaspoon
  • Salt/ pepper to taste

  • Put Macaroni to boil. Add a couple of drops of cooking oil and keep stirring at an interval of 1-2 minutes
  • Once done, strain and keep aside
  • Heat oil in a pan. Once hot, add the ginger-garlic paste and chopped onions
  • Saute for a 1-2 minutes till slightly brown
  • Lower the flame, tomato and mix
  • Now add salt and stir for 1-2 minutes
  • Now add the chopped vegetables, sugar, and pepper
  • Mix well and cook it for 5-7 minutes on low-medium flame. Keep mixing in between
  • Once the veggies are cooked, add Macaroni to the mix. You can allow a few drops of water
  • Now mix well on low flame. Use a soft hand, you don’t want yours to be crushed
  • Add tomato ketchup and mix again
  • While it’s still on flame, add the nicely crushed fenugreek leaves and mix
  •  Turn the gas off and let it sit for a minute

Congratulations, you are now the proud owner of a bowl of desi style Macaroni with the goodness of maa ka pyaar.
