Well, this one needs no introduction. You can find it being offered in the narrowest alleys and the biggest high-street restaurants alike. This lip-smacking dish is loaded with flavors and very easy to make using any one of the readily available spice-mix. Here it goes…
Ingredients
- Pao/ Bread slice
- Potato (medium sized) – 2
- Onion – 1 Big
- Tomato – 2
- Capsicum (medium) – 1
- Green peas – 6-7
- Carrots (medium – small) – 2
- Garlic – 5-6 cloves
- Butter – at least 50gm (though more the merrier)
- Pao Bhaji spice mix – 4 teaspoons
- Salt to taste
Preparation
- Peel potatoes and carrots
- Chop potatoes, carrots, ½ onion, 1 tomato, ½ capsicum into 1 inch cubes
- Put them into a pressure cooker along with peas. Add 1 cup water and put them to boil
- Turn of the gas after 1 whistle and let the pressure release itself
- When the pressure in the cooker is released, match the vegetables in it
Finely chop the remaining ½ onion, 1 tomato, ½ capsicum and garlic
- In a pan, heat oil, add garlic, onion, capsicum to it and saute for 1-2 minutes
- Now lower the flame, add tomatoes, spice mix and salt (you can adjust the amount of spice mix based on how strong flavors you like)
- Turn the flame back up to medium and mix
- Keep constantly stirring for few minutes until the tomatoes are done. Usually just saute until tomatoes don’t look raw
- Add the mashed vegetables to it and mix well
- Add a bit of water to make it like a loose paste. Cover it and let it cook over low flame for 10-15 minutes. Keep stirring at an interval of 4-5 minutes
- On a flat pan, add butter (depending on how rich you want you Pao Bhaji to taste!) and bake your bread/ Pao on it
- Serve hot!!
