Tired of eating rice/ chapatti and looking for something different that fills you up too? Well, you have stumbled across the right page. Another product of our experimentation during the lockdown phase, these pancakes checked all the boxes when it came to having an interesting, relatively healthy, filling and easy to make dinner. Again cheers to my wife for her ingenuity and willingness to share this recipe. So let’s dig in….
Ingredients
- Besan (Gram Flour) – 1 cup
- Sooji (Semolina) – 1 cup
- Onion/ Tomato/ Capsicum/ Carrot/ Green chili – 1/ 1/ 1/ 1/ 3-4
- Curd – 1 cup
- Chili powder – ½ teaspoon
- Turmeric powder – ¼ teaspoon (can be skipped)
- Oil to cook
- Salt to taste
Preparation
- Finely chop onions, tomato, capsicum and green chilies while grate the carrot
- In a large bowl, add gram flour, semolina, curd and form into a thick paste
- Now add water and vegetables along with the spices (chili powder, turmeric and salt)
- Make a thick paste (thickness should be something like that of honey) – not flowing on its own
- Keep the mixture aside for 30 mins
- Take a flat pan and grease it with a few drops of oil and heat it over medium flame
- Once hot, spread 1 big table spoon of batter onto the pan and spread it by rotating the spoon in concentric circles
- Turn the flame hot and let it cook for about 60-90 seconds
- Turn it over and let it cook for another 60 seconds
- Repeat above steps to get a big pile of these savory pancakes for a full blown meal
Serve hot with ketchup or coriander/ tamarind chutney. Do try it out guys and let me know your feedback. Hope you like it.
