Bored of the usual Indian style omelets? Well, was so did I until I came across this equally easy and simple to make, Spanish omelet recipe. A product of me venturing online and looking for new recipes to try, I personally loved the output in the very first try along with the taste. Not to mention it is an added variety in which you can have your regular eggs.
Ingredients:
- Eggs – 4 (serves 2-3)
- Potato/ Onion/ Green Chili – 1/ 1/ 2 (medium size)
- Oil/ butter to saute and cook
- Oregano/ Chili flakes – ½ tea spoon (can be skipped)
- Salt/ Pepper to taste
Preparation:
- Cut potato and onion into half and then slice them as thinly as possible
- Finely chop green chilies
- Heal oil/ butter in a flat pan (ideally not very big in diameter)
- Add chopped onions and potato in it and saute until they turn slightly translucent (you should see them losing their firmness)
- Put these into a bowl
- While still hot, add green chilies to them along with seasoning and salt/ pepper. Mix once
- Now add 4 eggs to this mixture and beat it for about 30 seconds
- Keep the same pan used on medium heat and add slightly more oil/ butter to it
- Pour the egg mixture in, spread it across the entire pan by tilting the pan
- Let it cook, you ideally want golden-brown base (so slightly more cooked than the usual omelet)
- Once the mixture is no more runny on the top, flip it and let it cook for another 30 seconds
Voila! Your Spanish omelet is ready to be had. Cook it as a high protein breakfast or a mid-night snack, it suits all day parts. Do try it out and let me know your feedback.
